Joshua Coase from The Staff Canteen spoke to Tom about his early change in career paths, his passion for wine and The Swan’s Michelin star ambitions.

Alongside Jason Atherton, Phil was part of the opening of Berner’s Tavern and is a current contestant on the Great British Menu. Having first worked with Jason in 2002, helping to launch Gordon Ramsay’s Maze, the two then partnered up again at the Pollen Street Social in 2011 before setting up this London hotel restaurant.
Andrew is thoroughly enjoying his time working as head chef at Fishmore Hall Hotel. He previously worked as a senior sous chef at the 3AA Rosette and Michelin-starred Montague Arms in Hampshire. Andrew is also competing in The Great British Menu 2016.
Adam first ventured into the restaurant business with his best friend and fellow chef Chris Harris in May 2014 and within a year the Slice was listed in Michelin guide and Good Food Guide. Prior to that the Welsh chef worked as a protégé of Michelin-starred Stephen Terry. Adam also won the Welsh crown on the Great British Menu last year.
